Hi!
I just wanted to share this recipe for a beautiful Moroccan couscous salad, with chickpeas and rucola. Healthy, filling and great with flatbread or pita and a light soup to keep you warm in the winter. Definitely makes me think of warmer times due to it’s North African/Middle Eastern influences.

Ingredients (for 3-4 people)
- 500 gr couscous
- 75 gr. rucola
- 200 gr chickpeas (canned)
- 250 gr cherry tomatoes
- 50 gr sun dried tomatoes
- ½ large cucumber
- 1 avocado
- 15 gr coriander
- Olive oil
- Half a lemon
- Salt, black pepper
- Grinded turmeric, curry and paprika powder
I’m not going to give an explanation on how to make this. If I can make it, anyone can! Cut, mix and match. Add salt, pepper and spices according to your taste! It should end up looking something like this:
